Spoil your loved ones on the Valentine’s Day with the extravagant recipe of Poached Foie Gras from Christopher Graham, Ossiano’s Executive Sous Chef!

Baked Potato Mousse: • 1.5kg baked potato passed (keep half for mash) • 175g butter • 175 ml milk (infused with baked potato skins) • 50ml double cream

Take 500g and add it to 500g mayonnaise, soak 2 gelatine leaves, add to a small amount of veg nage and add to the potato mix, put into a cream gun and charge with 2 cylinders nitrous oxide. Keep warm in baine marie till ready to use. For Baked Potato Mash, add slightly reduced warm cream to still warm reserved mash until the desired texture is reached. Add 1 cube of Butter at a time until you reach the desired richness and texture.

Foie Gras: • 500ml chicken stock • Sprig thyme • 2 clove garlic • 1 bay leaf • Thinly sliced foie gras (1cm thick)

Add thyme, garlic and bay leaf to chicken stock and reduce by half, then lightly season stock with salt. Place pot on side of stove, add foie gras and lightly poach for 2-3 minutes till just cooked. To finish it off, present your new creation in beautiful fashion. Your significant other will be overwhelmed with joy!
