Atlantis Kitchen Secrets: Nobu Matsuhisa’s New Style Salmon Sashimi Recipe

Chef Damien Duviau, head chef of Nobu, the best Japanese restaurant in Dubai reveals the ingredients and recipe of the restaurant’s signature appetizer, Salmon Sashimi, including instructions for preparing, plating and a few secret tips, so that you can recreate this drool-worthy dish in the comfort of your home.

Salmon Sashimi Recipe from Nobu Japanese Restaurant

Ingredients for 4 portions:

  • 280g Fresh salmon fillet

Toppings:

  • 25g Ginger
  • 5g Garlic
  • 15g Chives
  • 10g Sesame seed
  • 15g Japanese daikon
  • 1 frozen Cherry tomato

Sauces:

  • 70g Olive oil
  • 10g Sesame oil
  • 15g Yuzu juice
  • 65g Soya sauce

Instructions:

Step 1: Prepare the salmon

  • Slice the salmon into paper-thin slices (around 10g each slice) with a sharp knife
  • Fan out the slices in a circle over a dinner plate

Secret Tip: If the salmon slice is too thin, it’s going to be overcooked when you sear the fish. If it’s too thick, you will have too much raw flavour.

Step 2: Prepare the topping

  • Make a garlic puree using a blender with 20g of olive oil and the garlic
  • Make a very thin julienne with ginger, chives, and Japanese daikon

Step 3: Prepare the sauces

  • Mix 1 spoon of yuzu juice with 3 spoons of soy sauce to prepare the yuzu soy sauce
  • Mix the 5 spoons of olive oil with 1 spoon of sesame oil to make the mixture which will be used to sear the fish

Step 4: Plating

  • Arrange 7 slices of salmon in a dinner plate
  • Put a little bit of garlic puree on top of each slice along with 2 to 3 pieces of the ginger and chive
  • Add some of the yuzu soy sauce (about 3 spoons)
  • Sprinkle some sesame seeds
  • Heat the olive and sesame oil mixture until smoking hot
  • Pour hot oil on top of each slice to sear – make sure to sear it till the fish changes colour
  • Garnish with Japanese daikon and frozen cherry tomato

Secret Tip: Freeze-dried cherry tomato lends a new texture and flavour to the dish
